Bikini

Serves 10 people

For the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Drink (yields 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

Making the Citrus Syrup: Place all the ingredients into a pan, bring to a gentle boil, agitating to dissolve. Then, turn off the heat and leave to cool down completely. Pour into an sterilised bottle, cap it and refrigerate it in the fridge, it will last for around one month.

For the Premix: Mix the specified spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, so it's fully clarified.

When ready to serve: Add 85ml of the batch mix to a mixing glass packed with ice, gently stirring carefully for a minute to cool it down. Strain to a frosted cocktail glass or a similar vessel, top with a few cranberries and complete it using a quick spritz of the essential oil over the top.
